In the arid landscape of Arizona, Connie found her forever mate during her high school years. With a heart full of love, she cherishes her four wonderful children and adores her six precious grandchildren. As they embarked on the journey of marriage, her husband’s army travels took them to different states and countries, and each new place ignited her imagination, fueling her with inspiration for countless stories.
Despite obtaining an Applied Science Degree in Early Childhood Administration & Management from Rio Salado College, she couldn’t ignore the stories that had been hiding in the recesses of her mind any longer and was determined to have them published.
As she brings her imaginary characters to life on the page, she finds herself caught in passionate arguments with them, a testament to her deep connection to their stories. They appear to have a better understanding of their own emotions, thoughts, and preferences than she does. In their stories, Connie plays the role of the humble scribe.

Bread Pudding

  • 2 cups cubed stale bread
  • 2 cups milk
  • ¼ cup sugar
  • 3 tbsp butter or lard
  • 2 eggs
  • Salt
Put bread in a baking dish. In a saucepan, mix milk, sugar, and butter. Remove from heat and whisk in eggs. Pour the mixture over the bread. Make at 350 degrees for 40 minutes.

Easy Stew Recipe

Ingredients

  • 1 1/2 pounds beef stew meat
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 1 jar (18 ounces) brown gravy
  • 1 can (14 1/2 ounces) diced tomatoes, undrained
  • 3 medium Yukon gold potatoes, cut into 2-inch pieces
  • 1 medium onion, cut into eighths
  • 1 bag (8 ounces) baby-cut carrots (about 30)
  • 1 package (8 ounces) whole mushrooms

Steps

  1. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Sprinkle beef with seasoned salt and pepper. Cook beef in skillet about 5 minutes, stirring frequently, until brown; drain.
  2. Mix gravy and tomatoes in 3 1/2- to 6-quart slow cooker. Stir in beef and remaining ingredients.
  3. Cover and cook on low heat setting 8 to 9 hours or until vegetables and beef are tender.
